Joe I. Smith, Pickle Maker - Pickles at first were only a side-line, and he began making them because he had the cucumbers, was fond of the pickles, and hates for anything to go to waste. As his reputation as pickle maker grew, he planted more cucumbers, and almost before he knew it he was in the pickle business. At first he began giving them away to friends that he knew were pickle fanciers, and in 1966 he sold over 450 gallons........quote from the book "Willow Springs and Surrounding Communities 1869-1969 Centennial" by Ella Lilly Horak.
